Akadama Honten's Commitment and History

Kanazawa oden is defined as oden made with ingredients unique to Kanazawa, such as wheel-shaped gluten, red rolls, steamed fish, clams, crab noodles, hirozu made with Kanazawa ginkgo nuts, and Kaga vegetables such as Gensuke radish, and with dashi that each store treasures (according to the Kanazawa Oden Established 50th Anniversary Association).

Oden soup stock

Before the war, the storefront was a Western-style restaurant, and in 1947 the first proprietress, following the wishes of her late husband, who was a chef, began serving oden in order to run the restaurant single-handedly.
Since then, the secret oden soup stock has been added to every day without fail, and is made from carefully selected kelp and dried sardines, painstakingly simmered in Kanazawa's delicious water, resulting in a gentle flavor that can only be achieved by making it by hand.
It has no unnecessary ingredients and is a smooth, transparent golden color.
The soup is infused with the flavors of seasonal Kaga vegetables and the lovingly crafted fish paste, creating a refreshing yet indescribably rich flavor.

Black soup stock

At Akadama Honten, we use two types of dashi for our oden: "white dashi" and "black dashi."

The specialty dishes, "Beef tendon stew" and "Yudofu" are made with a slightly sweet black broth made from a secret oden broth with Ono soy sauce from Kanazawa added to it.

Soy sauce made in Ono, Kanazawa's sea gateway, is made using traditional brewing methods that have been learned and passed down since the Genna era, when the third lord of the Maeda clan, Maeda Toshitsune, ruled Kaga.
Umakuchi soy sauce, brewed in Ono, an area with an abundance of water and suitable for cultivating the koji mold used to ferment soy sauce, is an essential part of Kaga cuisine.

Akadama Honten uses an original blend of whole soybean soy sauce that is free of artificial coloring and additives.
The unique sweet aroma of Umakuchi soy sauce spreads softly in your mouth.

The typical ingredients of Kanazawa oden include wheel-shaped gluten, red rolls, and clams, as well as the classic radish and fish balls made from nigisu (a type of flatfish).
Each dish is carefully handcrafted using carefully selected ingredients.

"Kanazawa oden" changes its appearance with each season, incorporating original oden ingredients and seasonal Kaga vegetables.

Our fluffy and soft oden is made using safe and secure ingredients cultivated in the Kanazawa region, so it can be enjoyed safely by children and the elderly.

History and Tradition

In 1927, the first owner of the restaurant established the Western restaurant "Akadama" in Katamachi, Kanazawa.

Since 1947, when the first proprietress of the restaurant began serving oden in order to run the restaurant single-handedly, following the wishes of her late husband, who was a chef, the dish quickly became popular with many customers in the cold Hokuriku region, warming both the body and the soul, and has spread its name as a taste rooted in the local area.

During the postwar reconstruction period, Akadama oden was a source of comfort to many people, and as times changed from Showa to Heisei and now Reiwa, the flavor has continued to be preserved. The restaurant was passed down to the second and third generations, and in 2019 the current fourth generation owner returned to his hometown from Tokyo and is working to establish the brand as "Kanazawa oden" for a new era.

While inheriting the flavor of this long-established restaurant, we continue to take on new challenges to meet modern needs, such as mail order sales and the development of seasonal menus.
